Alfredo for Breakfast, Lunch, & Dinner

Let's look at how we can make use of Alfredo for Breakfast, Lunch, and Dinner.







Breakfast:

Hashbrown Casserole

Here's a healthy weekend breakfast side dish! One Dish Hashbrown Casserole with NO cans of soup! GF, Egg Free.
1.5lb Frozen Hash browns ~ 5 cups
1 pkg Alfredo mix, 2 cups mlik
2 T butter
1 tbsp each 3 Onion and Cheese Chive and Bacon (CCB)
1 tsp of your fav salt -I"m partial to garlic salt 😉
1/2 cup greek yogurt (or sour cream)
1 cup cheese, shredded
In your multipurpose steamer combine milk, alfredo pkg, butter and spices. Cook uncovered 5-6 mins until bubbly and thickened up slightly. Stir in Greek Yogurt, cheese & hash browns
Place lid on and cook 8 mins until heated through and hash browns are thawed. Pop into a hot oven for 5-10 mins to crisp up if desired. How fun is this!!!

Lunch:                   

Skinny Zucchini Alfredo

Ingredients

12 cups milk
4 small zucchinis, spiralized into thick noodles
2 cups chopped broccoli
1 cup frozen peas
Grated Parmesan cheese, to taste


Preparation

  1. In a Multipurpose Steamer combine mix with milk. Microwave, uncovered, on high for 4–5 min,  or until thickened, whisking halfway through.
  2. Add zucchini noodles, broccoli and peas. Gently toss to mix.
  3. Cover and microwave on high 1–2 min, or until veggies are tender. Top with cheese, as desired.

Per serving: Calories 180, Fat 5 g (Saturated 3 g, Trans 0 g), Cholesterol 15 mg, Sodium 340 mg, Carbohydrate 23 g (Fiber 0 g, Sugars 0 g), Protein 14 g.

DINNER:


Alfredo Lime Chicken Pasta             

 
Ingredients
12 cups milk, your choice
34 lb (340 g) uncooked fettuccine
1 tbsp oil
1 lb (450 g) boneless, skinless chicken breast fillets
1 lime

Preparation

  1. In a bowl, whisk sauce mix with milk. Set aside.  
  2. In Multipurpose Pot set over high heat, boil pasta until tender, about 8–10 min. 
  3. Meanwhile, heat oil in a large fry pan over medium-high heat. Add chicken and season with pepper. Cook until golden and cooked through, about 8 min.  
  4. Add reserved seasoning mixture. Reduce heat to medium, stirring constantly, until sauce thickens, about 2 min. Turn off heat. 
  5. Using a microplane or small holes on a box grater, zest lime. 
  6. Once cooked, drain pasta; add to pan. Add lime zest.  
  7. Slice lime in half. Using 2-in-1 Citrus Press, squeeze in juice from 12 lime. Using tongs, toss to combine. Taste, adding juice from remaining 12 lime, if desired.
