Vegetarian Mexican Feast

Made the quickest and best Saturday Night Meal: Black bean quesadillas with Creamy Nacho Sauce and Pineapple Salsa

You can certainly use Mango or another fruit instead of Pineapple- but We used canned pineapple tidbits and it was perfect.  We are not big tomato fans, so this may be our salsa from NOW ON!!!

I love the fact that we don't have jars and jars of sauces and condiments in our fridge.  With Epicure jars of seasonings, we just make what we need.

I love to be able to make fresh salsa anytime.  All you need is 1 cup of diced tomatoes for the regular salsa- that's canned or fresh!

Now for the Quesadilla Recipe:

Ingredients

1⁄2 cup mayonnaise or 2% Greek yogurt

1 1⁄2 tbspNacho Cheese Dip Mix

1 can (14 oz/398 ml) black beans

1 cup grated cheese, your choice

4 (6"/15 cm) flour or corn tortillas

1 large tomato

2 tbspPoco Picante Salsa Mix

1⁄2 lime

Preparation

1. Line a Sheet Pan with a Sheet Pan Liner. Preheat oven to 400° F.
2. Meanwhile, in bowl, stir together mayonnaise with dip mix. Set aside.
3. Drain and rinse beans. 
4. Arrange tortillas on pan. Spread dip on half of each tortilla. Top with beans and cheese, then fold tortillas over filling.
5. Bake for 10 min or until cheese melts and tortillas are light golden.
6. Meanwhile, prepare salsa. Dice tomato; place in a bowl and stir in salsa mix. Using the 2-in-1 Citrus Press, squeeze in 1 tsp lime juice. Stir to mix.
7. Cut tortillas into wedges and serve with salsa.

Per serving: Calories 390, Fat 12 g (Saturated 2 g, Trans 0 g), Cholesterol 15 mg, Sodium 1040 mg, Carbohydrate 51 g (Fiber 10 g, Sugars 4 g), Protein 20 g.

Plant Based Eating

I am vegetarian and my family is not. Most of my life we have never been able to eat at the same time or even the same meals.  Once Epicure entered our lives, that all changed. Not only does my family love the Easy Peasy Tacos and Bolognese, I can start most meals vegetarian and then separate out helpings, add the different proteins.  It's WIN-WIN and we eat together!!!

There are many nights that we all eat the same meal, and everything is seasoned so well, the family doesn't mind that it doesn't contain Meat.

Got Peeps?

Left over Peeps?!?!? How about Rice Krispie PEEPS! I love Epicure's Multipurpose steamer for such easy cleanup.  I wouldn't even begin to try this with any othe product- between the stickiness of the marshmallow and the sugar crystals! YIKES!!! But in our multipurpose steamer it cleans up like a charm!!!

When you stir them after the butter and chicks melt, be gentle.

Then add the rice cereal and gently stir, place in glass dish and cool.  YUM!!!!

These were a hit at our Easter Celebration!!
