Last Call items JUST added

Some of my favorite items have been added to our Last Call collection.  These are only available while they last.  I LOVE the square Silicone steamer.  I JUST used it last night to steam my black beans for Enchiladas. The Meal Solution for the Veggie Burger is pretty yummy too, I just ordered 10!! YES, they are still available, but I'm not sure how long the steamer will be. Perfect size for Brownies, and microwave lasagna!!

5 Minute Egg Salad! WHAT!?!?!

5 Minute Egg Salad! NO Peeling!!
You can certainly enjoy yummy potatoes in the rectangular steamer- I love to mix up Epicure's ranch and sour cream and put it on top-AMAZING!! But sooo much more!

I use my Epicure Rectangular steamer for other things- popcorn, mashed cauliflower, sides, frozen veggies...  Whenever I use the multipurpose steamer to make meat, I cook my meal in this one.  Perfect size for single serving of a main course- think chicken with seasonings, or sided loaded to the top.



After a little research and making a few eggs and frittata's in this guy, I decided to make egg salad.  YUP!! Egg Salad.

The video below shows the entire process. No more peeling eggs and it tastes 'EGGS'actly the same.  

3 Eggs, 3 Minutes in microwave -ours was about 2 min. 30 seconds. let cool for one minute and mash, mash, mash- add your regular egg salad ingredients and serve or refrigerate until ready to use.  No egg salad smell either.

Perfect Rice.

I have to say that I will no longer drag out my Rice cooker to make rice!! I needed rice to make the Chicken Fried Rice (BTW YUM!!!) I portion some out and make it vegetable fried rice for myself. Every steamer comes with a product card- don't throw it out- If you did- reach out, I can get you another one!  The recipe calls for 1:2 I wanted to make more so here's what I did- 

perfect. every. time.

Directions: 2 cups rinsed Rice, 4 cups Water(I make it vegetable broth with Epicure's Vegetable Broth mix(tastier and low sodium), Tray on Top. NO COVER Microwave for 10 mins. Let sit for additional 10 min. Perfect rice, every time!! I loved my rice cooker- but why?!?! drag that monster out when I can do it so much easier. Fluffy rice ready for meals.

Epicure Chicken Fried Rice- NO MSG, Low Sodium, low sugar, no artificial colors or flavors, gluten free(use gluten free soy sauce)




Ingredients

2 tbsp low-sodium soy sauce
2 tbsp water
1 tbsp sesame oil
1 tbsp vegetable oil
1 lb (450 g) boneless, skinless chicken thighs or breasts
3 cups cold, cooked white rice
4 cups shredded coleslaw



Preparation

  1. In a small bowl, whisk together seasoning, soy sauce, water, and sesame oil. Set aside.  
  2. In Wok, heat vegetable oil over medium-high heat. Meanwhile, cut chicken into bite-sized pieces.  
  3. Add chicken to wok; stir-fry until cooked through, about 5 min.  
  4. Increase heat to high; add rice. Stir often to break up clumps and heat through, about 5 min.  
  5. Gradually add coleslaw (wok will be full). Add reserved seasoning mixture; stir-fry 3 min or until coleslaw is tender-crisp.  

Nutritional Information

Per serving (about 1 1/2 cups): Calories 430, Fat 15 g (Saturated 3 g, Trans 0 g), Cholesterol 75 mg, Sodium 490 mg, Carbohydrate 44 g (Fiber 2 g, Sugars 5 g), Protein 26 g

Meatless Monday!

Wanted to share some of my amazing meatless meals that I enjoyed this weekend with you and maybe get you thinking about trying meatless Mondays. I am vegetarian not vegan there is a difference. I do consume eggs and dairy products. But, most of the Meal solutions do start of Vegan and I would say nearly100% start off Vegetarian.  I feel like I've won the lottery since discovering Epicure

I had some roasted potatoes in the mini steamer- OH MY!!! So yummy with the creamy Ranch sauce on top. 



Made these ranch roasted potatoes in 10 minutes. Used the rectangular steamer and lil’ potatoes.
recipe here #vegetarian Ranch sauce was amazing. My daughter is right. I will use this on everything.





I also made CHA CHA CHILI with Beyond Burger. I cooked up the Beyond Burger in the Mutipurpose Steamer for a few minutes, used the meat separator and separated it out and cooked a few more minutes- added the seasonings, some beans, water, and tomatoes, dinner was on the table in 10 minutes!
Finally, I made Broccoli Cheese Soup. What was so special about that? I used the Home-Style Chicken Stew(yes vegetarian) Mix to make it. My First Cooking class
