CCB EGG BITES

Ingredients

10 eggs
12 cup cheddar cheese

Preparation

  1. Preheat oven to 400° F. Using Basting Brush, lightly oil two Muffin Makers and place on Sheet Pan.
  2. In a bowl, whisk eggs and dip mix. Pour into muffin cavities, filling each about 34 full. Sprinkle with cheese.  
  3. Bake 15 min or until eggs are set. Let cool slightly before removing from cups.

Nutritional Information

Per serving (2 egg bites): Calories 190, Fat 13 g (Saturated 5 g, Trans 0 g), Cholesterol 420 mg, Sodium 220 mg, Carbohydrate 3 g (Fiber 1 g, Sugars 1 g), Protein 15 g.

Ingredients

13 cup olive oil

1 tbsp balsamic vinegar


Preparation

  1. In a bowl, whisk mix with oil and vinegar.

Dinner on Us in August


Really, August Already?!?! How did that happen? We have so many great promotions. When you spend $60 you get Dinner on Us! I love this because I like to encourage my customers to try something they wouldn't normally get, something they're on the fence about.  It's free!  Our family loves the 3-in-1 Burger press.  It really does work well and creates the perfect patties- regular, sliders, and stuffed! And the mini whisk- I always need this!

Cheese Stuffed Burgers

Ingredients

1 lb (450 g) lean ground turkey, chicken, or
pork
2 tbsp Sweet & Spicy Mustard
1 - 2 tbsp3 Onion Dip Mix
2 oz (14 cup) mozzarella or cheddar cheese, cut in 4 cubes
1 cup shredded mixed greens
1 tomato, sliced
4 small multigrain or gluten-free buns

Preparation

  1. Combine ground meat, seasoning, mustard, and dip mix.
  2. Using 23 of the meat mixture, form 4 patties using the 3-in-1 Burger Press. Then use the press to indent each burger patty in the middle. Place cheese cube in the centre of each patty and cover with remaining meat mixture.
  3. Cook for 7–8 minutes on greased grill over medium-high heat or in a frying pan with lid closed, flipping once, or until cooked through and an instant read thermometer indicates a Food Safe internal temperature of 175° F (80° C).
  4. Toppings: Top each bottom half of the buns with 14 cup greens, followed by a burger patty and a tomato slice. Spread burger sauce evenly over remaining four bun halves, and place on top to enclose. Serve immediately.

I L❤️VE the versatility of Epicure. Recently I made 3 meals that were so very far from what the back of the package had intended.  I encourage you to check out the recipes on my site.

EASY BLACK BEAN SOUP


Perfectly Balance Your Plate

Serve with 14 sliced avocado, 12 cup tortilla chips (try crushing them over your soup!), and 12 cup sliced veggies.

Ingredients

4 cans (19 oz/540 ml each) low-sodium black beans
2 bell peppers
1 yellow onion
1 can (28 oz/796 ml) no salt added diced tomatoes
4 cups water

Toppings (optional): diced red onion, 2% plain Greek yogurt, sliced avocado, hot sauce

Preparation

PROGRAMMABLE PRESSURE COOKER 

  1. Drain and rinse black beans; add to an 8-quart programmable pressure cooker.
  2. Dice peppers and onion. Add peppers, onion, diced tomatoes, water, and seasoning to pot. Stir to combine.
  3. Secure lid. Place steam release valve in SEALING position. Press MANUAL button, select HIGH, and set the time to 10 min. This will take some time to get up to temperature before the timer starts to count down.
  4. When the cook time has finished, naturally release pressure for 10 min.
  5. Using a long-handled spoon, push the steam release valve to VENTING position. Release pressure completely before opening lid.
  6. Using an immersion blender, purรฉe most of the soup, leaving some chunky bits. Taste and season with salt as desired.
  7. Serve with additional toppings, if desired.

SLOW COOKER 

  1. Drain and rinse black beans; add to a 6-quart slow cooker.
  2. Dice peppers and onion. Add peppers, onion, diced tomatoes, water, and seasoning to slow cooker. Stir to combine.
  3. Cover; cook on high 4–5 hours. The liquid should be bubbling and the onions soft.
  4. Using an immersion blender, purรฉe most of the soup, leaving some chunky bits. Taste and season with salt as desired.
  5. Serve with additional toppings, if desired.

Per serving (about 2 cups): Calories 300, Fat 1 g (Saturated 0.3 g, Trans 0 g), Cholesterol 0 mg, Sodium 410 mg, Carbohydrate 55 g (Fiber 21 g, Sugars 6 g), Protein 18 g.

The 3rd recipe We tried that was fantastic! I love the Easy Peasy Bolognese over noodles or to dip french bread in it as an appetizer

 Vegetarian Bolognese Pizza


Ingredients

1 can (28 oz/796 ml) crushed tomatoes
12 cup water or broth
12 cup plain non-dairy creamer or half and half cream (10%)
1 pint cherry tomatoes
12 red onion
2 (12" each) thin whole-wheat pizza crusts
12 cups grated mozzarella cheese, parmesan, or a mix of both

Toppings (optional): chopped black olives, fresh basil or arugula

Preparation

  1. Preheat oven to 450° F.  
  2. In a large Multipurpose Pot, combine mix, crushed tomatoes, water, and creamer. 
  3. Cover; simmer on medium heat for 15 min, stirring occasionally. It will thicken near the end of the cook time; stir more frequently at that time to prevent sticking. Season with salt and pepper to taste.  
  4. Meanwhile, slice tomatoes in half. Thinly slice onion.  
  5. Place pizza crusts on two separate Sheet Pans lined with Sheet Pan Liners. Spread 1 cup sauce over each crust (save remainder for use at a later date). Top with tomatoes, onion, and cheese. 
  6. Bake until cheese melts, 8 min. Remove from oven. To serve, cut each pizza into 8 slices.

Per serving (2 slices): Calories 310, Fat 10 g (Saturated 4.5 g, Trans 0 g), Cholesterol 15 mg, Sodium 610 mg, Carbohydrate 42 g (Fiber 8 g, Sugars 5 g), Protein 18 g.
