You Can Make Anything Vegetarian

YES! You can make pretty much any Epicure Meal Solution- Vegetarian.  This is why I love Epicure- I am #vegetarian, my family is not!  Today I used a crab cake packet that I received in one of my Subscription boxes to make Chick Pea Cakes! YES!! They were delicious.
I just followed the recipe on the back and instead of crab, I mashed up chick peas. 


Chick Peas are an amazing alternative to meat.  Check it our for yourself:For the recipe I used a tad bit of mayo, the seasoning,
and mashed chick peas. I used a little less than a can of chick peas. I pressed into mini muffin tins, although you could use the regular sized Silicone Muffin maker (you get 2 of these). 

Ingredients

oil, for greasing
about 10 oz chickpeas (less than 1 can)
1 egg
1 tbsp mayonnaise
1 pkg Classic Crab Cake Seasoning

Preparation

  1. Preheat oven to 400° F. Generously oil Muffin Maker. Set aside.
  2. Drain crab meat well. Set aside.
  3. In a bowl, whisk together egg, mayonnaise, and seasoning. Fold in crab meat. Don’t overmix; leave some chunks.  
  4. Divide mixture evenly between 6 wells in Muffin Maker. Press to lightly pack.
  5. Bake 15 min, or until cooked through and tops are golden-brown.
  6. Let cool slightly before unmolding.

Free Epicure X2

The time to host an Epicure Party is now!  I helped my hostesses earn over $500 in free products last month!! THIS month the Hostess points are Doubled!  This is a great time to host a Party- virtual or in-person.

Today's Recipe: Beef Parmesan Burgers 



Beef Parmesan Burgers

Ingredients

3 green onions
1 lb (450 g) lean ground beef
4 slices mozzarella or provolone cheese
1 cup pasta sauce, your choice
4 ciabatta buns, split and toasted

Toppings (optional): fresh basil leaves, grated Parmesan 

Preparation

  1. Preheat grill to medium-high. 
  2. Chop green onions; place in a large bowl and add beef and seasoning. Using a fork or your hands, gently mix to combine. Form into 4 patties. 
  3. Grill, with lid closed, 4–5 min or until cooked through. Add cheese for the last 1 min of cooking. While burgers are cooking, measure sauce into a Rectangular Steamer. Cover; microwave on high until hot, 1–2 min. 
  4. To serve, place burgers on bottom bun halves. Generously spoon sauce over top. Add toppings, if desired. Cover with top bun.

Per serving: Calories 410, Fat 16 g (Saturated 6 g, Trans 0.4 g), Cholesterol 70 mg, Sodium 580 mg, Carbohydrate 33 g (Fiber 3 g, Sugars 4 g), Protein 32 g.

Tips

To test burgers for doneness, insert an instant read thermometer sideways into the burger. It should register 160° F.

Try Marinara Sauce. Follow label directions—all you need is 1 can (28 oz/796 ml) each crushed and diced tomatoes, plus 3 tbsp of the blend. Simmer for 15 minutes and you’ll have 6 cups of sauce ready to go! Portion and freeze leftovers.

Agentinian Pizza

Serve with 1 12 cups leafy green salad with fresh lemon.

Ingredients

12 lb (225 g) extra lean ground beef or chicken
4 naan, plain or garlic flavour
1 cup Greek yogurt
14 cupChimichurri Sauce, prepared
2 cups mixed cherry tomatoes, halved or quartered
1 cup shredded reduced-fat mozzarella
4 cups baby arugula or kale

Preparation

  1. Place beef and seasoning in a Multipurpose Steamer. Cover; microwave for 2 minutes on high. Using a fork, break up meat. Cover and microwave until cooked through, 2–3 more minutes. Drain and discard liquid.

OVEN PREPARATION:

  1. Preheat oven to 425° F (220° C).
  2. Arrange naan on 2 Sheet Pans. Spread yogurt overtop; drizzle with Chimichurri sauce.
  3. Sprinkle beef, tomatoes, and cheese on top. Bake until edge is crisp and cheese melts, about 10 minutes.
  4. Top with arugula.

GRILL PREPARATION:

  1. Preheat grill to medium.
  2. Place naan on grill for 1 minute.
  3. Remove; spread grilled sides with yogurt, Chimichurri, beef, tomatoes, and cheese. Grill until edges are crisp and cheese melts, 2–3 minutes.
  4. Top with arugula.
