Mini Cranapple Shortbread Biscotti Cookies Dipped in Chocolate, topped with Spiced nut crumble!
1.)Prepare the Shortbread mix as directed but I added an additional 2 tbsp Cranapple Cinnamon and bake in Perfect Petites for 14-17 minutes at 350*. I poked a fork in each one multiple times to help with a crunchier texture.
2.)Prepare Cinnamon Spiced Nuts pack according to the directions and I used chopped pecans and slivered almonds.
3.)Melt 1 cup of dairy free chocolate with 1 tsp of coconut oil in the microwave in 30 sec intervals till soft and melted. Once chocolate starts to thicken reheat for 20 seconds to thin it out.
Assembly
Take 1 cookie at a time and dip it half into the chocolate, set on Sheet Pan with Liner and top with a sprinkle of the Spiced Nut mixture.
Repeat till done then refrigerate 15-20 minutes until chocolate has firmed up. Store in fridge or freezer.
